I called into my son's class yesterday to make bacon & egg cups, and bacon, egg & veg cups. The kids were all so excited and loved getting their hands dirty. I had to leave before they had the chance to eat them, but my son told me that everyone loved them and wanted seconds.
They are so easy to make, all you need to do is crack a few eggs into bowl, add chopped bacon (unless vegetarian) and chopped mushroom, capsicum, spring onion and spinach (or whatever you like). Pour into greased muffin tins and cook for 20 minutes on 180 degrees C until cooked through. You can eat them warm or keep them in the fridge for a few days, making them the perfect lunchbox snack.
