Beef in Red Wine
It was a bit cold here today so I decided to cook beef in red wine. I would usually serve this with lots of green vegetables, but tonight I had run out, so decided that it would just be served with cous cous. The photo is lacking colour, and the cous cous was a little clumpy as I got distracted playing Monopoly with the kids. Oh well, it tasted pretty good, and having the oven on for 3 hours warmed my house up too. Win/Win!!

Beef in Red Wine
1 onion, chopped
1 carrot, peeled and chopped
1-2 sticks celery, chopped
2 tblsp plain flour
1kg chuck steak, diced
1/2 cup red wine
1 cup beef stock
1-2 potatoes, chopped
Fry onion until browned, add carrot and celery and cook for 2-3 minutes. Meanwhile, coat the beef in flour and add to the pan, browning the meat all over. Pour in red wine and stir for a few minutes, then add beef stock and potatoes. Stir well, cover and place in the oven on 150-160 degrees C for around 3 hours (or until the meat is tender). Serve with cous cous and greens. Serves 6.
This recipe is quite plain (so great for kids), however you could always add some spices, chilli or herbs to give more flavour. You could also add some lentils or beans to the recipe to make it go further.
