Caramel Popcorn
Tonight I went to see Bohemian Rhapsody at the movies and I loved it. I was tempted to buy some popcorn, but I don't really like it from the cinema as it is too salty. Thankfully, Alyce Alexandra has provided this Caramel Popcorn recipe for No Packet November which I am very keen to try.

Caramel Popcorn
100g liquid glucose
100g butter
40g honey
120g grapeseed oil
120g popcorn kernels
Salt, to taste
1. Place glucose, butter and honey in TM bowl, mix for 10 seconds, speed 4.
2. Cook for 25 minutes, Varoma temperature, speed 2.
3. Meanwhile, heat oil in large saucepan over medium heat and add 3 popcorn kernels. Once kernels begin to pop, add remaining kernels and shake saucepan with lid slightly ajar to allow steam to escape. Once popping noise slows to one every couple of seconds, remove from heat. Place popcorn in a large mixing bowl and discard any un-popped or burnt kernels.
4. Pour caramel over popped corn, sprinkle with salt and stir until well combined. Spread across baking paper and allow to cool.
Note: If you don't have a Thermomix, you could still make this on the stovetop using a saucepan to make the caramel.
