Date, Apricot & Nut Bliss Balls

A simple bliss ball recipe to save reaching for the plastic wrapped snacks during No Packet November.

Date, Apricot & Nut Bliss Balls

1/2 cup pitted dates

1/2 cup dried apricots

1/2 cup boiling water

1/2 cup almonds

1/2 cup walnuts

1/2 cup rolled oats

1 tablespoon cacao powder

1 tablespoon sesame seeds

1 tablespoon chia seeds

1 tablespoon maple syrup

Roughly chop the dates and apricots and soak in the boiling water for 5 minutes. In a food processor, blitz the almonds and walnuts, then add the remaining ingredients. Pulse until combined. If the mixture looks too wet, add more rolled oats, if the mixture looks too dry, add a little boiling water. Form into balls and roll in coconut, sesame seeds or whatever you like. Refrigerate. Makes 18-20.

Note: Quantities are approximate as it depends if you use medjool dates or regular dried dates.
