One Pan ANZAC Biscuits

Everyone loves ANZAC biscuits and there are so many variations to the original recipe.  This is one that I created using just one pan (because I hate washing dishes), and it is packed full of nuts too.  Now that everyone is home-schooling it is a great time to include more nuts in your diet provided there are no allergies in your family.  If there are, just replace the nuts with seeds like pepitas and sunflower seeds.  We love to eat these ANZAC biscuits for 'recess' with a platter of fresh fruit & veg.


ANZAC Biscuits 125g butter 2 tblsp honey 1 tblsp water 1/2 tsp bicarb soda 1 cup rolled oats 1/3 cup raw sugar 1 cup plain flour 1/2 cup nuts (almonds & walnuts)  


Melt butter, honey and water together in a medium saucepan over low heat.  Stir in bicarb until it is frothy.  Remove from heat, add rolled oats and sugar, along with flour and finely chopped mixed nuts (you can use seeds or coconut here if preferred).  Roll into balls and flatten a little, bake at 180 degrees for 10-15 minutes.
