Pumpkin Brownie

Who doesn't love a chocolate brownie? They are one of my favourites, especially when I go out for coffee. I also make my own 'healthier' version at home using zucchini, but I have never tried this one, using pumpkin, but it looks amazing so I will definitely give it a go.

Ingredients:

3/4 cup Pumpkin Purée (boiled and blended)

1/3 cup Maple Syrup (RMS or Honey)

2 eggs

1 tsp Vanilla

3/4 cup Almond Meal

3 tbsp Coconut Flour

1/2 cup Cacao Powder

1/2 tsp Cinnamon

1/4 tsp All Spice (optional)

1/3 cup Choc Melts (Dark Choc) chopped

Method:

- Mix all wet ingredients with the pumpkin purée.

- Add in all dry ingredients and mix until well combined.

- Place in a slice tray (8”x 8”) and bake for approximately 20mins, on 180 degrees.

- Enjoy warm or place in fridge for up to 5 days.

Optional: Serve with coconut yoghurt and granola.
