Simple Salad for Day 1

Now that the weather is finally warming up here in Victoria I have been giving my girls a salad for lunch (unfortunately my son isn't so keen...yet)!

My personal goal this month is to make more salads, and learn lots of new recipes. This salad really doesn't really require a recipe, as it's just salad leaves and any other vegies you have, such as tomato, cucumber, celery, capsicum, cabbage, etc. Optional extras include poached chicken or tuna on top, cheese (feta is good), nuts and seeds.

What makes this salad stand out is the yummy dressing, that is best served in a separate container, to avoid a soggy salad at lunchtime. You will find the recipe below.

Give this a try over summer and see if you can convert your kids into salad lovers. I promise I will also bring you a few other salad options this month, that are a little more exciting. However, starting with the basics is important and you can get the kids involved to make this themselves.

Dijon Dressing

1/3 cup olive oil

1/4 cup balsamic vinegar

2 tsp dijon mustard

2 tsp honey

Salt & Pepper

Mix all ingredients together well. Pour over salad just before serving.
